Vineyard Notes:
Budbreak was April 24th, harvested on September 27th. The growing season in 2006 was almost ideal. A full fruit set in early June provided a generous potential yield. We then selected the best positioned clusters and removed the rest to meet our target of 2.5 tons per acre. A long warm summer provided ideally ripe grapes with harvest about 10 days earlier than average at Winter’s Hill.
Production Notes:
The grapes were picked, destemmed and cold soaked for 48 hours in small one-ton fermenters before yeast inoculation. After fermentation to dryness the wine was pressed, settled for 16 hours, and racked into French (70%) and American (30%) oak for a total of 25% new oak. The wine aged in barrel for 18 months before bottling in May 2008.
