Tasting Notes:
“High elevation fruit from a late year. The assignment: find balance. We chose to quench the fermentation (that is, to push the tank outside into the November chill) while there remained enough sugar to offset the grapes’ considerable acidity. The result is akin to what the Germans bottle as Kabinett—low in alcohol and possessing great freshness, and less sweet-seeming than the lab numbers would suggest. The green, tightly-coiled aromatics here are true to form.” ~ Brian McCormick, Winemaker (8/8/11)
