The wine expresses tremendous depth and complexity and has developed remarkably well.
The vines were sourced from two famous Burgundian Estates and budded to our vineyard.
The wine was fermented in conical French oak tanks with 65% whole grape clusters and fermented with the vineyard yeast found on the grapes. During fermentation, the wines were punched down up to 6 times per day and racked to 100% new French oak barrels using only gravity.
