2010 was a cool year for us in the Willamette Valley, producing wines with bright acidity, pretty aromatics and low alcohol.  Our 2010 Pinot Blanc was whole cluster pressed then fermented in 80% Stainless Steel and 20% Neutral Oak barrels.  Three different yeast strains were used to ferment this wine in order to add complexity in aroma, flavor and texture.  The wine was aged sur lee for 8 months with lees stirring monthly. We left a small (almost imperceptible) amount of residual sugar in the wine to balance out its abundant acidity.  This wine pairs really well with crab and other shellfish.
