Tasting Notes
This fortified dessert wine is made from 100% Pinot Noir from our estate vineyard. The waffle syrup aromatics develop oin the palate, but are nicely balanced by the natural acidity and added alcohol. The finish is warm and pleasant. Juice from several different fermenters was drawn and combined with distilled grape neutral spirits to arrest fermentation when the must was at about 11 Brix. The cuvee therefore represents a blend of the Pinot Noir clones in our vineyard. It finished at about 6% residual sugar, which is nicely balanced by the natural acidity in the fruit and the added alcohol. Waffle syrup and compoted raspberries on the palate intermingle and evolve into a warm pleasant caramel finish. Only 22 cases were produced.
